Dave’s Mediterranean Quinoa Salad

Ingredients
2 cups Quinoa
1 can Chickpeas, drained and rinsed
1/4 cup dried Cranberries
1/4 cup Currents
1/4 cup Almonds
1 small bunch Chives, chopped
1 Red Pepper, chopped
1 White Onion, finely chopped
1/4 tsp. Cumin
2 cloves Garlic, crushed and minced
1/4 cup Apple Cider Vinegar
2 tbsp. Olive Oil
1/4 tsp. Nutmeg
Directions
– Rinse Quinoa thoroughly in cold water.
– Cook in boiling water until tender, drain, and rinse with cold water.
– In a large bowl, mix other ingredients into cooled quinoa.
– If desired, add lemon juice to taste.
– Leave in fridge overnight.
